I eat tacos for dinner just about every week. They are one of my absolute favourite foods and make a fun plant-based option that stills feels like a fiesta!
While tacos are a go-to restaurant menu item for me, I think they taste just as good made at home, as long as you get creative and invest in some fresh ingredients. Here is a plate that I made myself this week, with my random taco toppings recorded for you!
Taco #1: The Old Classic
Before I start going crazy with ingredients, I need to eat at least one traditional taco with my favourite stand-by ingredients! I never tire of beans and salsa, so they take centre stage in this mix.
- refried beans
- black beans (I like to sautee mine with a little olive oil and chilli seasoning if I have time)
- taco seasoning
- chunky tomato salsa
